For some types of food allergies/intolerances/sensitivities, looking at food preparations from different cultures might be the way to go - for example, many cultures do not use wheat in their food preparations...this can open the door to many wonderful, exotic culinary experiences.
However, there is a lot to consider with this type of experimentation, especially if you have multiple food issues. ABC News does a nice job looking at 7 types of ethnic cuisines, listing the common hidden ingredients to watch out for, as well as foods that might be safe.
